Eat your greens! This delicious creamy pasta dish can be whipped up in less than 30 minutes. I like to make it when I get off in the afternoon. It's perfect for a light lunch, or even a decadent dinner.
Ingredients:
penne pasta
avocado
2-3 cups baby spinach
1/4 cup fresh basil
1/4 cup grated parmesan
2 tbsp olive oil
1 tsp salt
1 tsp pepper
1 tsp italian herbs
lemon juice
garlic clove
First, Put the salted water on the boil. Then start prepping the sauce. Slice up and scoop out the avocado, mince the garlic clove. Put penne pasta in the water. Combine avocado, spinach leaves, basil, olive oil, salt, herbs, pepper, garlic, and lemon juice in food processor. Add to pasta when al dente. Done!
