Mushroom Bread Recipe


Mmm, mushrooms. Who doesn't love those fantastic fungi that provide us with so much food? Here is a savory mushroom and herb loaf of bread that pairs well with cream of mushroom soup.


Ingredients:

1 cup warm water

2 1/2 cups flour

2 1/4 teaspoons yeast

1 cup milk

1 teaspoon sugar

1 tablespoon salt

2 tablespoons honey

2 tablespoons butter

1 tablespoon soy sauce

5 oyster mushrooms

1 yellow onion

1 tablespoon oil

1 tablespoon thyme


Start by proofing the yeast by combining warm water, sugar, and yeast in mixing bowl. Whisk and set aside five minutes until bubbly.

Meanwhile,  chop the oyster mushrooms and onion into small pieces and saute in butter and soy sauce over medium heat. 

 Add milk, honey, salt, herbs and mushroom mix to bowl. Stir, then add flour and mix with a wooden spoon. Add extra flour as needed if dough becomes too sticky. 

Knead dough eight minutes and roll into a ball. Drizzle with oil and cover bowl for at least 45 minutes for dough to rise.  

Bake at 400 degrees for 25 minutes.
