Try this dish for a simple summer vegetarian dinner, it is very easy to make. All you need are:
I cup olive leaf pasta
1 clove garlic
1 tablespoon toasted pine nuts
1 tablespoon black walnuts chopped
1/4 cup pesto
1/4 cup mozzerella pearls
Boil the pasta in salted water for 10 minutes. Mince garlic and toast with pine nuts and black walnuts. Drain pasta and mix with pesto, add garlic and nuts mixture then mozzarella pieces.
Can be served warm or chilled as a pasta salad.
