Recipe: Honeysuckle Shortbread Cookies



The sweet smell of honeysuckle is in the air!  Foraging these flowers at the end of spring is always fun.  Honeysuckle can be found growing abundantly almost everywhere!  Their delicate floral scent lends itself well to teas, juices, jams and salads.  These honeysuckle shortbread cookies are a delicious accompaniment to a picnic on the porch....

To make Honeysuckle Shortbread Cookies, you will need: 

10 tbsp butter
1/2 cup sugar
2 tsp salt
1/2 tsp vanilla extract
1 1/2 cups flour
2 cups honeysuckle flowers
1/2 cup powdered sugar
1 tbsp milk

Begin by rinsing the honeysuckle and grinding most of it to a fine paste.  Save a few flowers for garnishing the cookies later.

Get the butter and mash into the vanilla extract.  If butter is too cold, heat it up a bit.  Add sugar, salt and flowers blending very well.

Add flour until dough starts to form.  Knead into a log shape and refrigerate for one hour.

When the dough has cooled enough, slice into 1/4 inch thick circles. Bake for 10 minutes at 350 degrees.  

While the cookies are baking, whip up the frosting by mixing powdered sugar with milk.  When the cookies are done baking and have cooled, glaze the tops with icing and add a honeysuckle blossom to each one!

  3. there is another problem as i made the cookies but there is not enough liq to keep it together as when i cut them they fell apart and when i cooked them they were dry and fulling a part
